  • Lemons should be fully yellow with minimal green tinges, which is a sign the fruit will be more acidic

Lemons will stay fresh for about one week if stored at room temperature and away from exposure to sunlight. If you will not be using them within this time period, you can store them in the refrigerator crisper where they will keep for about four weeks.
